Coconut Spinach Smoothie
The Coconut Spinach Smoothie is one I could make for the kids on a regular basis. It has the yummy taste of coconut, and the healthy benefits from the spinach. Brody practically drank it down is one slurp.
I was talking with a friend today, and she was explaining to me how her daughter Maddy will not eat vegetables. We were discussing some ideas on how to sneak the veggies into her food. I mentioned the Coconut Spinach Smoothie, and I thought this was a really good one to do that with. It’s also a pale green color, so maybe she won’t notice. Lol, just kidding! The kids are way too smart for that one. Then I suggested she put it into a solid color cup so Maddy won’t be able to see through it. She thought it was a good idea, and was going to try it. I don’t know the results yet, and will keep you posted on this one.
I have a passion to cook and bake, but now making the smoothies is one of my kitchen favorites. The ingredients you can put into smoothies is unlimited. You can pack them with healthy ingredients, and they taste great. For instance, I like to use lots of spinach, kale, dates, chia seeds, yogurt, fresh & frozen fruits, almond butter, different types of nuts, and more. The best part is that the kids like to participate, and they drink them. It’s very rewarding as a mom to make them a healthy snack like this.
This smoothie is a great snack, but it can be great for breakfast too. Add a little almond butter, and some granola to the top for a healthy fun breakfast.
Coconut Spinach Smoothie
I love the way this looks. I feel like I can eat it just like this. See the chia seeds at the bottom. I add these to almost everything now. They’re healthy, and are a great addition. Add all your ingredients into the blender. (Only add half of the coconut water.)
This is Brody’s favorite kitchen equipment. It’s loud, and it has power!! Let it blend until well mixed, and creamy. It will look pale green, but I promise you will not taste any spinach in this one. Just in case your little one might oppose it, put it into a cup they can’t see through.
Pour into your favorite coconut cup. I bought this one on Amazon. They have a few different types of coconut cups to choose from.
This Coconut Spinach Smoothie really has a light coco nutty flavor, and the kids won’t even taste any spinach. We love this one, so hope you enjoy!!!

Coconut Spinach Smoothie
Ingredients
- 1 cup lowfat vanilla yogurt frozen in ice cube tray
- 1 Large banana
- 1 handful spinach
- 1/2 cup coconut cream light in a can
- 1/4-1/2 cup cocnut water add to desired consistency
- 2 tablespoons chia seeds
- 1 tablespoon shredded coconut as a garnish for the top
- 2-3 spinach leaves as a garnish for the top
Instructions
- Fill the ice tray with the yogurt. One cup will fill half of the tray. Freeze for at least 4 hours, or until frozen.
- In a blender the banana, chia seeds, coconut cream, half of the coconut water, and the frozen yogurt to the top.
- Blend on med-high until well blended and no lumps. Check the consistency. This is when you will add more coconut water if you want it thinner.
- Add a sprinkle of shredded coconut, and a few spinach leaves to the top to garnish.
