Spooky Stuffed Witch Cookies Ingredients
Decoration
- 1/4 cup mini candies
- ¼ cup white chocolate
- 1 drop orange food coloring
- orange coconut flakes
- 12 sugar eyes

Dough
- 1 cup white flour
- 2 ounces butter
- 1 egg
- 1-2 tbsp water
- 1 tbsp sugar
- green and black food coloring

How To Make Spooky Stuffed Witch Cookies
Making the cookie dough
The butter needs to be room temperature so if itn’s in the fridge, make sure to take it out one hour before you start making the cookie dough.

Pour the flour and sugar into a bowl and mix thoroughly with a whisk.
Add the butter and rub it into the flour and sugar until it’s evenly distributed and flakes form.
Beat in an egg and pour in one or two tablespoons of ice cold water and stir. You want a soft dough that doesn’t stick to your hands, so, you may need to add a pinch or two of flour.
Coloring and baking the dough
Color 1/3 of the dough black, the rest green.

Roll out the black dough into a 1/2 inch thick layer, then cut into hat shapes using a cookie cutter. Alternatively, draw yourself a hat template to use.
Sprinkle the hat cut outs with purple sprinkles.
Roll out the green dough into a 1/2 inch thick layer, and cut out circles with a 2 inch cookie cutter – these will be the bottom layer of the witches face.
Cut off the top section of each circle and brush this edge with water – this is where the hat will join.
Now brush water over the bottom edge of the hat, and connect the two together.
Place the cookies on parchment.

Roll out the remaining green dough and cut circles with a diameter of 2 1/2 inches. Place them on a silicone mold so they bake into a shallow cup shape.
Bake the cookies in the oven at 350 degrees Fahrenheit until the edges start to brown.
Cool on a rack.
Once cool, sand the edges of the curved cookies with a grater.
Assembling the cookies
Melt the chocolate and color it orange.
Place the candies into the cups and brush the rim with melted chocolate. Cover with a flat green cookie and then turn over, so the flat cookie is on the bottom, with curved cookie cup on top.

Drizzle chocolate on the hairline and sprinkle with the coconut shavings or orange colored sprinkles.
Glue on the nose and eyes.
Use an icing pen to draw on the mouth.

For longer freshness (up to 1 week), refrigerate in an airtight container. For best flavor, let cookies come to room temperature before serving.
Freezing
I don’t recommend freezing the decorated and fully assembled witch cookies. Instead, freeze the baked and cooled cookies: place in a freezer-safe bag for a max of 3 months.
Thaw at room temperature, then construct, stuff and decorate the witch cookies as above.
Make-Ahead Tips for Stuffed Witch Cookies
Prepare Dough in Advance
Both the green witch face dough and black hat dough can be made up to 2 days ahead. Wrap tightly in plastic wrap and place in fridge.
Allow to soften on the counter for 20–30 minutes before shaping and baking.
Shape/Cut & Freeze
Cut and stick together the face and hat together, place on a baking sheet, cover with plastic wrap and freeze.
For the curved cookies, place the cutouts onto the silicon moulds, cover with plastic wrap and freeze.
Bake straight from frozen, adding 2–3 minutes to the baking time.
Decorate Later
Bake the cookies ahead and store undecorated in an airtight container or freezer. Then construct and decorate them on the day.
