A Simple & Nutritious Lunch Or Dinner Idea
Every year the kids and I have fun making and eating all sorts of weird and wonderful sweet Halloween treats. The savory Halloween snacks and meal ideas are a little trickier to conjure up. I guess that applies to everything savory in our house. All 6 of us have a sweet tooth!
So I was determined to create a simple and healthy savory dish, for a quick lunch or dinner, to fit the season. With a little bit of thinking and creativity we came up with this spooky noodle bowl filled with simple and delicious ingredients.
Well, although it may not look delish, I can tell you my kids devoured it in a matter of minutes. The promise of their earlier created Halloween pumpkin cones was possibly a help in that too….
The ghosts were a bit of a challenge as we couldn’t come up with what to use. Then, it was an ah-ha moment, and I felt like a “mummy”, then yes of course firm tofu. It worked great for our little ghosts.
Ingredients & Substitutions
All the ingredients are healthy and you’re likely to have most of them at home already. The only thing you may need to pop to the shops with are the black rice noodles. The dark, and fairly grim-looking, noodles are integral to this dish!
- Black rice noodles
- Green beans
- String cheese strips
- Tofu
- Mozzarella balls
- Black olives
- Butter
- Seasoning – we like garlic salt and black pepper

Recipe Steps
- Cook the black rice noodles as per the package instructions.
- As they’re cooking, slice the green beans lengthways and then steam. You can just place them in a sieve over the cooking noodles for 4-5 minutes.
- In the meantime, season and sautee the tofu in a pan until cooked through. Allow to cool before cutting into ghosts.
- Slice pitted black olives into discs.
- When the noodles are cooked, drain the and toss with the cooked green beans, butter, garlic salt and black pepper to taste.
- Add the tofu ghosts and mozzarella balls. Add a sliced olive to each mozzarella ball to look like an eyeball.
- And enjoy!
