FROZEN BANANA BITES
Frozen Banana Bites are an easy to make snack, or treat recipe. Kids love to make them, and eat them. We made 4 variations of this yummy treat with Greek yogurt, and different toppings. 1. Key lime yogurt with crushed chocolate cookies 2. Raspberry yogurt with Chia seeds 3. Coconut yogurt with shredded coconut, and walnuts 4. Vanilla bean yogurt with crushed bran flakes.
If you’ve read any of our other snack recipes, then you know my kids never stop eating. I need to be creative with a variety of snacks, and options for making healthy choices. These Frozen Banana Bites are great because they’re not limited to flavors. Choose their favorite yogurt flavor, pick a topping, and you will have their next favorite snack or dessert recipe. The best part is that it’s healthy with bananas, and Greek yogurt!
STEPS TO MAKE FROZEN BANANA BITES
DO BANANAS GO BAD IN THE FREEZER?
They will not go bad if they’re properly stored in airtight containers or heavy-duty freezer bags. Frozen bananas will maintain best quality for 2 to 3 months. If they don’t have any type of fungus, mold, or strong odor they can remain safe beyond the 2-3 months.
DO FROZEN BANANAS TURN BROWN?
Yes, frozen bananas will turn brown. Best to keep them in air tight freezer bags, although they will still turn brown. I notice them browning at about 5-7 days that they’ve been in the freezer. Usually, I slice the bananas spread them out in the freezer bag, and freeze. By slicing them up it tends to be easier on the blender when making smoothies. Typically, I will only freeze bananas for my Frozen Banana Bites, or smoothies. Also, if the bananas thaw out they will be very mushy, but can still be used in your favorite recipes.
CAN YOU FREEZE BANANAS IN THE SKIN?
Yes, you can definitely freeze bananas in the skin. In fast, this is a common practice amongst bakers for a delicious banana bread. When the banana turn a medium ripe with some browning on the peel, just put them into an airtight freezer bag. Then straight into the freezer. The peels will turn black, and wrinkly, maybe even a little scary, but perfectly fine on the inside. To use, remove from freezer and set out at room temperature about 10 minutes. This way the skins can be removed easily. Either use in a smoothie, or your favorite banana bread recipe.

KEY LIME WITH CHOCOLATE GRAHAM CRACKERS
The key lime version was so fun to make with the pretty green color, and with the added crushed chocolate graham crackers on top. Which, btw, taste just like chocolate cookies. They have a sweet, tangy taste, with a cookie crunch. My boys said this was one of their favorites. It was definitely a winner for me as well.

COCONUT WITH SHREDDED COCONUT & WALNUTS
This version is definitely for the coconut lovers out there. You will be wowed on how ah-mazing these taste. I must say they were all yummy, but this is hands down my favorite. First of all I love coconut, then add banana, and walnuts to the mix and it’s pure heaven. I choose this for a dessert, over ice cream. It’s healthy, and it works for me if I have that dreaded sugar craving.

RED RASPBERRY WITH CHIA SEEDS
Yum yum, yum! This version has such a delicious berry flavor. The key to making these is to use your favorite Greek yogurt flavor. This is raspberry, and it tastes so good straight out of the cup. When you freeze it with bananas, and add the Chia seeds it becomes a special treat. I let the kids eat these for after school snacks, because they’re healthy, and can usually hold them over until dinner.

VANILLA BEAN WITH BRAN FLAKES
If you want to go simple in flavor and keep it healthy, then this is the one for you. My boys are loving bran flakes these days, so they came up with this version. They crushed up the bran flakes, and we sprinkled them on top. They don’t pop in flavor like the other versions, but they are just as delicious. With the simple ingredients, these would be great for breakfast on the go.

TIPS FOR MAKING FROZEN BANANA BITES

- Use Greek yogurt over regular. The yogurt needs to be thick, or it runs off the banana and spread throughout the tray.
- Best to let them freeze over night.
- Keep in an air tight container to store.
- Eat them within a week, as the texture will start to change and appear dry and cracking.

OTHER IDEAS FOR FROZEN BANANA CREATIONS

- Roll in peanut butter, top with granola, and freeze.
- As a sweet treat – dip in melted chocolate, top with chopped almonds, and freeze.
- Dip in Greek strawberry yogurt, top with colored sprinkles, and freeze.
- Use your favorite flavor, and top them with mini chocolate chips.

Frozen Banana Bites
Ingredients
WHAT YOU WILL NEED
- tray, or plate
- parchment paper
- fork
- plastic wrap
KEY LIME WITH CHOCOLATE GRAHAM CRACKER
- 5 ounce Greek key lime yogurt
- 1 large banana ripe, with some brown speckles. Slice into 1/2" pieces.
- 1/4 cup chocolate graham cracker cookies
COCONUT WITH WALNUTS
- 5 ounce Greek coconut yogurt
- 1 large banana ripe, with some brown speckles. Slice into 1/2" pieces.
- 1/4 cup shredded coconut
- 2 tablespoons walnut pieces
RASPBERRY WITH CHIA SEEDS
- 5 ounce Greek raspberry yogurt
- 1 large banana ripe, with some brown speckles. Slice into 1/2" pieces.
- 1-2 tablespoons Chia seeds
VANILLA WITH BRAN FLAKES
- 5 ounce Greek vanilla bean yogurt
- 1 large banana ripe, with some brown speckles. Slice into 1/2" pieces.
- 1/4 cup bran flakes crushed
Instructions
PREP FOR ALL FROZEN BANANA BITE FLAVORS
- Prepare the tray with parchment paper. Peel the top off the yogurt container, and slice the bananas. Place a few slices into the yogurt cup, using a fork cover them with yogurt. Then lift them out and place them on the tray.
- After adding the toppings, cover with plastic wrap, and put the tray or plate into the freezer. Best if they freeze for 24 hours. You can take them out sooner, but check that are frozen through to the middle.
KEY LIME WITH CHOCOLATE GRAHAM CRACKER
- Add the chocolate graham crackers to a plastic baggie, seal and crush breaking them into small pieces. Sprinkle the chocolate graham crackers over the tops of the bananas.
COCONUT WITH WALNUTS
- Sprinkle with shredded coconut, and walnut pieces. (If the walnut pieces are too large, break them into smaller pieces.)
RASPBERRY WITH CHIA SEEDS
- Sprinkle the Chia seeds over the tops of the bananas.
VANILLA WITH BRAN FLAKES
- Put the bran flakes into a plastic baggie, seal and crush, pressing with your fingers into small pieces. Sprinkle the bran flakes over the tops of the bananas.
