Easy Leftover Chicken Tacos With Mango Salsa

These crispy chicken tacos are so quick and super tasty, with succulent well seasoned chicken, a vibrant fruity salsa topping with the satisfying crunch of taco shell.

Ingredients

Chicken Taco Ingredients

  • 2 teaspoons olive or vegetable oil for the pan
  • 4 cups cooked chicken – rotisserie chicken works great for this recipe
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 ½ teaspoons garlic salt
  • ½ teaspoon ground black pepper
  • 2 teaspoons parsley flakes
  • 1 cup chicken broth stock, or water as needed
  • 8-10 hard taco shells

Toppings

  • Mango salsa see recipe below
  • White mild cheddar cheese optional
  • Avocado optional
  • Cilantro optional

Mango Salsa Ingredients

  • 1 whole large mango diced
  • ½ cup diced cherry tomatoes
  • 2 tablespoons diced red onions
  • 2 teaspoons minced jalapenos
  • 1 tablespoon chopped cilantro
  • 1/8 teaspoon cumin
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • ½ squeeze lime juice
  • Avocado chopped optional

Instructions

Chicken Tacos Instructions

  • Heat 2 teaspoons of oil on medium heat, then add the cooked chicken. Heat the chicken 3 minutes, then add the smoked paprika, chili powder, cumin, onion powder, garlic salt, pepper, and parsley flakes. Mix well so the chicken is evenly seasoned.
  • Once chicken is heated, and seasoned, add the chicken broth or liquid to the pan, and let simmer 2-3 or until the liquid is dissolved.
  • Transfer chicken to a serving bowl.
  • To assemble the tacos, place the taco rack on a plate (if using), and layer the tacos with the chicken, shredded cheese, avocado, mango salsa, and cilantro on the top.
  • Add any other ingredients you like, enjoy!

Mango Salsa Instructions

  • In a medium bowl with the diced mango add the tomatoes, red onions, jalapeños, cilantro, salt & pepper, and a squeeze of lime.
  • With a large spoon mix the ingredients until well combined.

Notes

Prepping Shredded Chicken Ahead
You can shred and season the chicken ahead of time and store in fridge. Add a squeeze of lime, orange or lemon juice to create a loose paste withe spices to marinade the chicken in.
When ready to cook, place seasoned chicken in pan, add stock, and cook.
For cold leftover chicken tacos
Cook the chicken with the seasoning and stock, allow to cool and store in an airtight container ready to go.  Compile tacos once ready to eat - take chicken, tacos, salsa and other toppings separately and consturct when out - perfect for picnics!
