No-Bake Strawberry Cheesecake Cups
Servings: 3 large cups or 6 minis
- 1 lb. fresh strawberries chopped
Graham Cracker Crust
- 2 cups graham cracker crumbs sub with digestives or ginger snaps
- 1/4 cup melted butter
- 1 tbsp granulated sugar optional
Cream Cheese Mixture
- 2 8 ounce blocks of cream cheese, softened
- 14 ounce can of sweetened condensed milk
- 1 tsp vanilla essence
Toppings & Garnish
- Cool Whip or whipped cream for topping optional
- Extra strawberries, chocolate shavings, chopped nuts etc optional
Cream Cheese Mixture
In a large mixing bowl, beat cream cheese with a mixer, until smooth. Add sweetened condensed milk and vanilla, and mix well to combine.
Assembling The Cheesecake Cups
Start with a small layer of the cheesecake mixture, then add haf the graham cracker crumbs, followed by a layer of chopped strawberries.
Add another cheesecake layer, then a final layer of the graham cracker mixture.
If desired, top with whipped cream or cool whip, and additional fresh strawberries.
