Homemade Granola Recipe

We wanted to keep the sugar low for this recipe, and used only honey. Add a little brown sugar if you would like to sweeten it up!

Ingredients

Dry Ingredients

  • 2 cups whole rolled oats (aka, old fashioned oats)
  • 1/3 cup almond slices
  • 1/3 cup coconut chips
  • 1/3 cup hemp seeds
  • dash salt
  • 1/2 cup freeze dried blueberries Do not bake in recipe, and add after granola has baked and cooled. We used 1/2 cup, add them slowly until your desired amount.

Wet Ingredients

  • 2 tablespoons coconut oil
  • 3 tablespoons honey
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 300ºF, and line a baking sheet with parchment paper and set aside.
  • In a medium mixing bowl add the dry ingredients, whole rolled oats, almond slices, coconut chips, hemp seeds, and a dash salt. Set aside while preparing the wet ingredients.
  • Add the coconut oil and honey to a microwave safe cup or bowl. Microwave using the melt option for about 60 seconds until the coconut oil is melted. Then add the vanilla.
  • Add the wet ingredients to the dry mixture.  Stir, and fold until coated and well mixed.
  • Now pour the mixture onto the baking sheet with parchment paper, and with a spatula spread out evenly.
  • Place in the oven and bake for 8 minutes. After the 8 minutes, turn the baking sheet so the front edge is now in the back, and mix the granola. Doing this will ensure even toasting, for a nice golden hue.
  • Bake an additional 8 minutes. Remove from oven, let cool and add the freeze dried blueberries.  It's now ready to eat.

Notes

This recipe only calls for honey to sweeten, but add 2-3 tablespoons of brown sugar to the dry ingredients if you would like to sweeten it up.
This recipe is for loose granola, but if you would like it clumpy then add one whisked egg white after the wet and dry ingredients are well mixed. Spread onto the baking sheet, and DO NOT STIR while baking. Once it's baked and cooled, break into clusters and add the freeze dried blueberries.
