Cinnamon Swirl Banana Bread

Ingredients

  • 3 bananas smashed
  • 2 eggs
  • 1/3 cup neutral oil olive oil, sunflower oil, etc.
  • 1/3 cup sugar
  • 1/3 cup honey
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • For swirling: 1/2 cup sugar and 1 tablespoon cinnamon
  • Parchment paper for the 8x4-inch loaf pan

Instructions

  • Preheat the oven to 350°F (175°C). Grease or line an 8x4-inch loaf pan with parchment paper.
  • In a large bowl, mix together mashed bananas, eggs, neutral oil, sugar, and honey until well combined.
  • Add the flour, salt, baking powder, baking soda, and cinnamon directly into the same bowl with the wet ingredients. Mix until the batter is smooth and there are no lumps of flour.
  • In a small bowl, mix 1/2 cup sugar and 1 tablespoon cinnamon for the swirl.
  • Pour roughly half of the batter into the prepared loaf pan. Sprinkle generously with the sugar-cinnamon mixture.
  • Add the remaining batter on top and sprinkle again with the sugar-cinnamon mixture.
  • Use a knife to gently swirl through the batter to create a marbled effect.
  • Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  1. Ripe Bananas: Use ripe bananas for a sweeter taste and smoother texture in the bread.
  2. Avoid overmixing: Mix the batter only until the ingredients are combined. Overmixing can result in a dense rather than fluffy bread.
  3. Cinnamon-sugar layer: Make sure to generously sprinkle the cinnamon-sugar layer between the batter layers to achieve a good cinnamon flavor throughout the bread.
  4. Toothpick test: To ensure the bread is fully cooked, insert a toothpick into the center. It should come out clean when the bread is ready.
  5. Cooling before slicing: Allow the bread to cool in the pan before slicing. This will help it maintain its shape and prevent it from crumbling when sliced.
  6. Oil options: You can use olive oil, corn oil, or any other oil you prefer instead of neutral oil. Each will add a slightly different flavor to the bread, so choose the one you like best
