Prepare the potatoes by washing them well.
Place the washed whole potatoes (with skin on) in a pot of water. Cook for 8
minutes until they are partially cooked.
Remove the potatoes from the water and set them on a plate to cool slightly. Once cool enough, peel them.
Grate the ingredients
Grate the peeled potatoes into a large bowl.
Grate the onion and add it to the bowl with the grated potatoes.
Add the shredded cheeses, flour or cornstarch, salt, and pepper.
Mix everything thoroughly with your hands until you achieve a uniform dough.
Shape the balls
Use a spoon or cookie scoop to scoop small portions of the mixture to ensure uniform size.
Roll the portions into small balls, pressing lightly to compact them.
Cook in the waffle iron
Preheat the waffle iron and grease it lightly with butter to prevent sticking.
Place a potato ball in the center of each section of the waffle iron and gently press down to flatten.
Cook for 3-5 minutes until the waffles are golden brown and crispy.
Carefully remove the potato waffles from the hot waffle iron and serve.
