Red White Blue 4th of July Popsicles

These vibrant red, white, and blue popsicles are a fun, fruity, and refreshing way to celebrate July 4th—healthy, festive, and perfect for kids to make and enjoy!

Ingredients

Red Layer:

  • 8 Strawberries frozen
  • ½ cup water
  • 2 tablespoons white sugar

White Layer:

  • 12 ounces coconut milk
  • ½ cup white sugar
  • ¼ cup lemon juice

Blue Layer:

  • 1 ½ cup warm water
  • 3 tablespoons sugar
  • ½ teaspoon raspberry kool-aid

Instructions

  • Add the water, strawberries, and sugar to a blender and blend into a smooth puree.
  • Spoon the puree into the popsicle molds, making sure to only fill them ⅓ of the way. Freeze the popsicles for 2 hours.
  • Rinse the blender. Make the white layer by blending the coconut milk, white sugar, and lemon juice together.
  • Pour the creamy white layer over the frozen red layer and fill only ⅔ of the way. Transfer the popsicles back to the freezer for another 2 hours.
  • Make the final blue layer by mixing the water, sugar, and raspberry Kool Aid together in a bowl or mixing jug.
  • Pour this final layer over the frozen popsicles and then freeze these 4th of July treats for an extra 4 hours.

Notes

● You can substitute the strawberries for raspberries in the red layer if necessary.
● Also yogurt can be a substitute for coconut milk.
