Spiced Apple Pie Cinnamon Rolls

These fall-inspired apple pie cinnamon rolls are made from scratch with light and fluffy dough, loaded with cinnamon apple pie filling and then topped with a decadent cream cheese icing! Enjoy them as a sweet morning brunch, afternoon treat or for dessert.

Ingredients

Dough Ingredients

  • 2 1/2 tsp active dry yeast
  • 1 cup milk
  • 2 TBS white sugar
  • 2 eggs
  • 2 ¼ cup flour
  • cup butter room temperature

Filling Ingredients

  • 4 granny smith apples
  • 6 TBS butter
  • 2 TBS white sugar
  • 2 cups brown sugar
  • 2 TBS cinnamon

Icing Ingredients

  • 2 cups powdered sugar
  • ¼ cup butter softened
  • 4 oz cream cheese softened

Instructions

Cinnamon roll dough

  • Heat the milk in the microwave or on the hob until warm to touch (30-60 seconds in the microwave on high should be enough).
  • In the mixing bowl of your stand mixer, combine the warm milk, yeast, and sugar. Wait until it starts to bubble, around 8-10 minutes.
  • Whisk the eggs in a small bowl. Add the whisked eggs to the milk and yeast mixture and whisk to combine.
  • Now add the flour and, using the dough hook, mix for 2 -3 minutes until a shaggy/ rough dough forms.
  • Now add the butter and beat for a further 8-10 minutes or until a smooth dough ball has formed.
  • Cover the dough in cling wrap or with a damp tea towel to rise until it’s doubled in size. This should take around 2 hours at room temperature.
  • Make the apple pie mixture

  • Now it’s time to make the apple pie mixture. Combine the chopped apple, white sugar and cinnamon in a large fry pan.
  • Cook on a medium hit for 5-8 minutes until the apples are cooked through.
  • Add in brown sugar, mix until well incorporated, and then take the pan off the heat to cool.
  • Once the dough has doubled in size, remove it from the bowl and roll it into a large rectangular shape. Make sure to flour the surface well or use a silicone mat (my preferred option).
  • Make the rolls and bake

  • Pour the cooled cinnamon apple mixture onto the dough and spread it out evenly, leaving space around the sides as above.
  • Now roll the dough up tightly form the short side and slice it every 2 inches or so, making 6-8 large cinnamon rolls.
  • Place the individual rolls into a greased baking pan with the cut side up. Spread any of the spilt apple pie filling over the top of the rolls.
  • Bake the rolls in an oven preheated to 350 degrees F for 45-50 minutes or until golden brown.
  • Make the icing

Make the icing

  • While they’re baking, make the icing: combine the powdered sugar, butter, and cream cheese in a bowl and whisk until smooth.
  • Allow the cinnamon rolls to cool a little before spreading a thick layer of icing over the top. (If they’re too hot, the icing will melt.)
  • Serve your apple pie cinnamon rolls straight from the baking pan and enjoy!
