Servings: 8 cinnamon rolls
Dough Ingredients
- 2 1/2 tsp active dry yeast
- 1 cup milk
- 2 TBS white sugar
- 2 eggs
- 2 ¼ cup flour
- ⅓ cup butter room temperature
Filling Ingredients
- 4 granny smith apples
- 6 TBS butter
- 2 TBS white sugar
- 2 cups brown sugar
- 2 TBS cinnamon
Icing Ingredients
- 2 cups powdered sugar
- ¼ cup butter softened
- 4 oz cream cheese softened
Cinnamon roll dough
Heat the milk in the microwave or on the hob until warm to touch (30-60 seconds in the microwave on high should be enough).
In the mixing bowl of your stand mixer, combine the warm milk, yeast, and sugar. Wait until it starts to bubble, around 8-10 minutes.
Whisk the eggs in a small bowl. Add the whisked eggs to the milk and yeast mixture and whisk to combine.
Now add the flour and, using the dough hook, mix for 2 -3 minutes until a shaggy/ rough dough forms.
Now add the butter and beat for a further 8-10 minutes or until a smooth dough ball has formed.
Cover the dough in cling wrap or with a damp tea towel to rise until it’s doubled in size. This should take around 2 hours at room temperature.
Make the apple pie mixture
Apple pie mixture
Now it’s time to make the apple pie mixture. Combine the chopped apple, white sugar and cinnamon in a large fry pan.
Cook on a medium hit for 5-8 minutes until the apples are cooked through.
Add in brown sugar, mix until well incorporated, and then take the pan off the heat to cool.
Once the dough has doubled in size, remove it from the bowl and roll it into a large rectangular shape. Make sure to flour the surface well or use a silicone mat (my preferred option).
Make the rolls and bake
Make the rolls and bake
Pour the cooled cinnamon apple mixture onto the dough and spread it out evenly, leaving space around the sides as above.
Now roll the dough up tightly form the short side and slice it every 2 inches or so, making 6-8 large cinnamon rolls.
Place the individual rolls into a greased baking pan with the cut side up. Spread any of the spilt apple pie filling over the top of the rolls.
Bake the rolls in an oven preheated to 350 degrees F for 45-50 minutes or until golden brown.
Make the icing
Make the icing
While they’re baking, make the icing: combine the powdered sugar, butter, and cream cheese in a bowl and whisk until smooth.
Allow the cinnamon rolls to cool a little before spreading a thick layer of icing over the top. (If they’re too hot, the icing will melt.)
Serve your apple pie cinnamon rolls straight from the baking pan and enjoy!
