Preheat oven to 350º F. Spray your muffin top pan with the baking spray. (See notes for instructions for using a lined baking sheet or regular muffin tin.)
In medium bowl, combine the flour, baking powder, baking soda, and salt: set aside.
Combine in a large bowl, (or Kitchen Aid bowl) the eggs, bananas, brown sugar, and melted butter. Mix until bananas are in very small pieces
Then add your flour mixture and fold in gently. If using a Kitchen Aid or similar, select a low speed, stopping to scrape down the edges regular. Once your batter is smooth and mixed, stop. Be careful not to overmix as this will result in dense muffin tops.
Scoop the batter into the muffin top pan. Don't fill to the top, leave a small space around the edge.
Bake 10-15 minutes, depending on your oven. Check on them at 10 minutes, and if golden brown around the edges, they're done.
