Why You’ll Love This Healthy Overnight Raw Flaxseed Porridge

A nutrient-dense breakfast – This porridge is loaded with essential nutrients thanks to the fresh whole food ingredients used. The flaxseeds alone provide a rich supply of omega-3 fatty acids, fiber, and plant-based protein.

Quick and easy to make – Apart from leaving the flaxseeds and dates to soak overnight, assembling this homemade porridge couldn’t be easier! Just add the ingredients to a blender and serve with your favourite toppings.

Effortlessly customisable – Top the overnight porridge with your preferred toppings – an assortment of berries and fruit, a sprinkling of granola, and so much more. You can also easily make this flaxseed porridge baby-friendly and vegan by using a vegan sweetener instead of honey.

Low-carb – Normally not a concern if cooking for the kids, but as a time-pressed mom who rarely exercises properly, low-carb is always a win! Using flaxseeds instead of oats instantly makes this overnight porridge a great low calorie option.

How To Make Overnight Raw Flaxseed Porridge

Add whole flaxseeds in a medium bowl and cover them with water, about 2 fingers above the seeds. Cover the bowl with a plate or plastic wrap and leave it to rest overnight or for at least 10 hours.

Remove the pits inside the dates and place the dates in a bowl of water to cover them as you did with the flaxseeds. Let the dates rest in the water overnight or for at least 10 hours.

Once the flaxseeds and dates have soaked, place them in a blender together with the water, honey, dry coconut flakes, walnuts, and fruits (bananas, apple and strawberries).

If you prefer, you can drain and rinse the flaxseeds and dates before adding them to the blender, but then you will still need to add water to the blender to achieve the right consistency for the porridge.

Blend all of the ingredients until everything is very smooth with a jelly-like consistency. I recommend that you first blend using the first pulse mode and then change to the highest speed for several seconds.

If desired, add more water for a thinner consistency.

Pour the porridge into medium bowls and add any toppings of your choice, such as dry coconut flakes, fruit slices or walnuts.

Storage Instructions For Overnight Flaxseed Porridge

In The Fridge

Store this flaxseed porridge in an airtight jar or container in the fridge for 3-4 days. The flaxseed will continue to absorb moisture and thicken while in storage, so you may need to add some water or milk and give it a good stir before serving again.

Freezing

Freeze this overnight flaxseed porridge in a freezer-safe container for up to 1 month. Thaw it overnight in the fridge and give it a good blend with a splash of liquid (water or milk) and add fresh toppings of your choice.
